Chicken Florentine


6 – half breasts of skinned boneless chicken
¼ – cup butter or margarine
2 – tablespoons oil
2 – 10 oz. Packages frozen chopped spinach
½ – cup mayonnaise
¼ – cup sour cream
1 – 10 ¾ oz. Cream of Chicken soup
1 – tablespoon lemon juice
1 – teaspoon curry powder
½ – cup grated sharp cheese
½ – cup cornflakes or cracker crumbles

Sauté chicken in butter and oil for 10 minutes.
Cook spinach, drain or squeeze dry – spread in bottom of greased 2 qt. Casserole.
Top with chicken breasts.

Mix mayo, sour cream, soup, lemon juice and curry – pour over chicken.
Sprinkle with cheese. Top with crumbs.

Bake 350 deg. For 30 minutes. Serves 6.
(Can substitute broccoli for spinach.)

Smoked Salmon Toast
from Pillsbury: Fast and Healthy Cookbook

4 oz. Smoked salmon
2 oz. (½ cup) shredded reduced-fat mozzarella cheese
½ cup fat-free mayonnaise or salad dressing
1/4 cup finely chopped red onion
2 tablespoons drained capers, rinsed
32 melba toast rounds
chopped fresh parsley, if desired

1.  Heat oven to 350 deg.  In medium bowl, combine salmon, cheese, mayonnaise, onion and capers; mix well.  Spread 1 heaping teaspoon salmon mixture on each toast round to cover; place on ungreased cookie sheet.
2.  Bake at 350 degrees for 8 to 10 minutes or until thoroughly heated. Sprinkle with parsley.  Serve warm.

Yield: 32 appetizers

Zucchini Casserole

4 cups grated peeled zucchini
1 cup grated carrots
1 med. Grated onion
1 stick oleo margarine

Microwave 5 to 7 min. in large casserole pan..

Add:
1 can Cream of Chicken soup.
1 pkg. stuffing mix
1 cup sour cream

Bake 350 deg. For 30 min.
